Shaved Cauliflower and Radicchio Salad

We’re always looking for ways to use cauliflower. Here’s a great recipe that combines shaved florets of cauliflower with spicy Aleppo pepper flakes. The recipe calls for crisp, raw slices of cauliflower but I prefer to lightly blanch the florets and chill them before mixing the ingredients.

Ingredients

  • 1⁄4 cup lemon juice fresh
  • 1⁄4 cup honey
  • 2 tbsp ancho chili powder
  • 2 tbsp orange juice fresh
  • 2 tbsp olive oil
  • 1 1⁄2 cups baby arugula
  • 3⁄4 cup raisins golden
  • 1⁄2 cup pistachios toasted
  • 1⁄4 cup parsley packed leaves
  • 3 stalks celery thinly sliced
  • 1 head radicchio (achicoria) thinly sliced
  • 1⁄2 head cauliflower (about 1 lb.), trimmed and thinly shaved using a mandoline
  • Kosher salt to taste

Instructions

  • Whisk lemon juice, honey, Aleppo, orange juice, oil, and salt in a large bowl.
  • Add remaining ingredients and toss to combine.
  • Transfer salad to a serving platter; garnish with more Aleppo pepper.
