Saganaki
Saganaki refers to various Greek dishes prepared in a small frying pan, also called a saganaki, the most notorious being an appetizer of fried cheese. In this recipe the cheese is melted in a small frying pan until it is bubbling and generally served with lemon juice and pepper. In most greek restaurants in the USA and Canada, after being fried, the fried cheese is flambéed at the table the flames extinguished with a squeeze of fresh lemon juice while the waiter (and the patrons) all shout "opa!", making the presentation of the dish all the more impressive.
Ingredients
- 1 pound kasseri cheese substitute any firm sheep or goat's milk cheese
- 3 tbsp salted butter melted
- 1/2 lemon juice juice of 1/2 - lemon
- country bread thin slices or toasted bread
- 2 tbsp ouzo or sambuca substitute any anis liqeuer or brandy
Instructions
- Cut cheese into 3 wedges or slices 1/4 inch thick , place on a broiler pan brush with melted butter broil 4-6 inches from heat until cheese is bubbly and light brown remove from heat pour brandy over the cheese and ignite immediately sprinkle with lemon juice and serve with bread serves 8......
