Spicy Mac n Cheese Bites

Mac n Cheese is a comfort food favorite. You can turn it into party-time favorite with this recipe that kicks up the volume a few notches.

Ingredients

  • 1 tbsp Kosher salt
  • 1 cup macaroni
  • 1 tbsp unsalted butter
  • 1 tbsp all-purpose flour
  • 1/2 cups whole milk warmed
  • 1 cup monterey jack cheese shredded
  • 1 can jalapeño slices (canned) 4 oz can, diced, drained well
  • 1/2 tsp ground cumin
  • 1/2 tsp garam masala
  • 1 clove garlic minced
  • 1 tomato ripe, seeded and chopped
  • 2 egg beaten

Instructions

  • Preheat the oven to 375°F (190°C). Spray a 12-cup muffin pan with cooking spray or lightly coat with butter.
  • Place a large saucepan filled with salted water to about 1/3 from the top, on high heat and bring the water to a boil. Add the pasta, reduce the heat to medium, and cook until al dente, about 8 to 10 minutes. Drain the pasta in a colander and set aside.
  • Melt the butter In the same saucepan over medium heat. Add the flour and whisk the roux until smooth. Slowly add the milk while whisking constantly, until smooth. Continuing to whisk, slowly add the cheese until smooth. Add the chiles, cumin, garam masala, garlic, and tomatoes to the cheese sauce and stir to combine. Stir in the egg and mix well.
  • Add the cheese mixture to the pasta and fold until the pasta is all well coated with the cheese mixture.
  • Spoon the pasta mixture into the prepared muffin wells, dividing it evenly to fill each of the wells in the baking tin. Bake the morsels until they’re crisp and browned around the edges and bubbling, about 10 minutes. Allow them to cool in the pan for about 10 minutes then carefully cut around the edge of each morsel to dislodge it from the pan.
  • Place the bites on a serving dish and garnish with herbs.

Notes

You can fully prepare the bites in advance and refrigerate in an airtight container for up to 3 days.  When ready to serve, remove the morsels from the refrigerator and bring to room temperature.  About 15 minutes prior to serving time, put them in a baking dish or on a baking sheet and pop them in the oven for about 10 minutes at 325 degrees F.
