Balsamic and Maple Pork Chops with Strawberry Salsa

The addition of maple syrup and a sweet tangy strawberry salsa to this recipe give simple pan cooked pork chops a unique and welcomed upgrade.

Ingredients

  • 1/4 cup maple syrup
  • 3 tbsp balsamic vinegar
  • 2 tsp Dijon mustard
  • 4 pork chops 3/4 inch thick
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups strawberry avocado salsa recipe here

Instructions

  • Combine syrup and vinegar in a small saucepan; bring to a boil. Cook until reduced to 1/3 cup (about 3 minutes), stirring occasionally. Remove from heat; stir in mustard.
  • Heat oil in a large nonstick skillet over medium-high heat. Sprinkle pork evenly with salt and pepper. Add pork to the pan; cook 3 minutes on each side. Add vinegar mixture; cook 1 minute or until desired degree of doneness, turning pork to coat.
  • Place a pork chop on each plate; put a large spoonful of the salsa on top of each pork chop and drizzle about 1 tablespoon syrup mixture over each.
