Asparagus with Miso-Tahini Dressing

A simple but exotic treatment of blanched asparagus adding a Miso and Tahini dressing, creates a unique and flavorful dish.

Ingredients

  • 1 batch asparagus (about 8 to 10 stalks)
  • 2 tbsp canola oil
  • 2 tbsp tahini (available in specialty markets)
  • 1 tbsp red miso paste
  • 1 tbsp lemon juice (freshly squeezed)
  • salt

Instructions

  • Snap the tough ends off the end of each asparagus stalk.
  • Cut the stalks to create pieces 2 inches in length
  • Add tahini to a bowl
  • Add the miso paste
  • Add ½ of the lemon juice
  • Whisk to combine
  • Add a few drops of water if necessary to obtain the consistency of a sauce
  • Season with salt and pepper
  • Add oil to the pan over medium heat
  • Add the asparagus and cook until tender
  • Stir in the dressing until all asparagus is coated
  • Transfer to a small bowl for serving and drizzle the remaining juice.
