Asparagus with Miso-Tahini Dressing
A simple but exotic treatment of blanched asparagus adding a Miso and Tahini dressing, creates a unique and flavorful dish.
Ingredients
- 1 batch asparagus (about 8 to 10 stalks)
- 2 tbsp canola oil
- 2 tbsp tahini (available in specialty markets)
- 1 tbsp red miso paste
- 1 tbsp lemon juice (freshly squeezed)
- salt
Instructions
- Snap the tough ends off the end of each asparagus stalk.
- Cut the stalks to create pieces 2 inches in length
- Add tahini to a bowl
- Add the miso paste
- Add ½ of the lemon juice
- Whisk to combine
- Add a few drops of water if necessary to obtain the consistency of a sauce
- Season with salt and pepper
- Add oil to the pan over medium heat
- Add the asparagus and cook until tender
- Stir in the dressing until all asparagus is coated
- Transfer to a small bowl for serving and drizzle the remaining juice.
