Bah Kwa
If there’s one food that stands above the rest during the festivities of the Chinese New Year it is Kah Kwa. This Chinese treat, somewhat akin to jerky in the western world, is sold on the streets almost everywhere in the world that speaks any variation of a Chinese language. But it gains more significance during Chinese New Year reaching a status similar to fruit cakes at Christmas in the western world. Sales of manufactured forms of this treat are given as gifts during CNY. So, of course, we had to include it in our list of the quintessential Chinese dishes on our CNY menu.
Ingredients
- 1 kg ground pork
For the Marinade:
- 1 1/2 tbsp fish sauce
- 1 1/2 tbsp soy sauce
- 1 cup coarse sugar
- 1/4 tsp five spice powder
- 1/2 tsp cinnamon powder
- 1/2 tsp ground coriander seed
- 1/2 tsp white pepper
- 1 tbsp hua tiao
- 1 tsp soy sauce
Instructions
- In a large bowl combine all the ingredients and mix thoroughly to get the pork saturated with the marinade.
- Pour the pork mixture onto a shallow baking sheet lined with parchment paper and spread the mixture evenly until it is about 3/8 inch in thickness.
- Let the pork marinate in the baking sheet for about an hour.
- Preheat the oven to 360 degrees F. Place the baking sheet on the middle rack and bake for about 20 to 30 minutes.
- Remove the sheet and allow it to cool for about 5 minutes. Then cut the minced meat sheet into 3 inch squares. Lightly brush the honey on the pork pieces and grill over charcoal turning and coating the pieces with honey at each turn, about 10 minutes on each side.
- Remove the pieces and allow them to cool on a rack. The finished product should be slightly softer and chewier that jerky.
- Serve as hors d’oeuvres or snacks. Darn tasty with a cold beer. Enjoy.
