Balsamic and Maple Pork Chops with Strawberry Salsa
The addition of maple syrup and a sweet tangy strawberry salsa to this recipe give simple pan cooked pork chops a unique and welcomed upgrade.
Ingredients
- 1/4 cup maple syrup
- 3 tbsp balsamic vinegar
- 2 tsp Dijon mustard
- 4 pork chops 3/4 inch thick
- 2 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups strawberry avocado salsa recipe here
Instructions
- Combine syrup and vinegar in a small saucepan; bring to a boil. Cook until reduced to 1/3 cup (about 3 minutes), stirring occasionally. Remove from heat; stir in mustard.
- Heat oil in a large nonstick skillet over medium-high heat. Sprinkle pork evenly with salt and pepper. Add pork to the pan; cook 3 minutes on each side. Add vinegar mixture; cook 1 minute or until desired degree of doneness, turning pork to coat.
- Place a pork chop on each plate; put a large spoonful of the salsa on top of each pork chop and drizzle about 1 tablespoon syrup mixture over each.
