Do you have a day or two up your sleeve? If so, challenge yourself to create this divinely delicious recipe that was made for kings and queens. Ingredients

Chocolate Mousse:

  • 160 g semi-sweet chocolate
  • 1/2 cup white granulated sugar
  • 80 g egg yolk
  • 1 pinch salt
  • 400 g whipping cream (30% to 35%) or double cream

Chocolate Bottom:

  • 75 g all-purpose flour
  • 10 g cocoa powder
  • 120 g egg white
  • 60 g egg yolk
  • 90 g white granulated sugar

Raspberry Jelly:

  • 150 g raspberries puree
  • 30-40 g white granulated sugar
  • 2 gelatin leaves

Icing:

  • 5 gelatin leaves
  • 135 g confectioner's sugar (powdered or icing sugar)
  • 100 ml water
  • 100 g whipping cream (30% to 35%) or double cream
  • 50 g cocoa powder

Instructions

Mousse:

  • Finely chop chocolate and melt over a water bath. When melted, let cool it to room temperature.
  • Heat sugar, egg yolks, salt, and 75 g cream to 131 F (50-55 C) degrees.
  • Strain mixture to remove any lumps. Whip until cool and fluffy.
  • Whip remaining cream (325 g) firm, but not hard.
  • Carefully add egg mixture to the chocolate. Use a spatula to mix it gently but firmly. Add whipped cream and mix well.
  • Pour mousse into piping bag. Fridge for minimum three hours.

Cake Bottom:

  • Preheat oven to 356 F (180 C).
  • Mix flour and cocoa in a bowl.
  • Whisk egg whites to a firm foam.
  • Carefully add sugar and whisk to a firm meringue.
  • Add egg yolk and whisk lightly.
  • Slowly add flour mixture with a spatula while whisking gently.
  • Spread the mixture to a 1 cm layer onto a baking tray covered with baking paper. Use piping bag or spatula.
  • Bake in center of oven for 10-12 minutes until spongy, not burnt!
  • When ready, let the cake cool on baking tray. Then but in freezer.

Raspberry Jelly:

  • Let raspberries simmer on medium heat a few minutes, then strain away seeds.
  • Soak gelatine leaves in cold water.
  • Heat raspberry purée and sugar.
  • Stir gelatine leaves into the hot puree until lump free. Allow to cool.
  • Pour puree into a baking tin, covered in plastic film, same size as the cake tray, to a 2-4 mm layer and freeze until firm. Then release plastic and puree from tin.
  • Again, cover the tin with plastic and place one cake bottom onto it.
  • Layer chocolate mousse on top of cake bottom and freeze until firm.
  • Place second cake layer on top of the mousse and cover with raspberry jelly.
  • Add last layer of mousse.
  • Freeze cake overnight

Icing:

  • Soaking gelatine leaves in cold water.
  • Boil sugar, water, cream and cocoa. Then stir down gelatine leaves.
  • Get cake from freezer and unleash from baking tray.
  • Pour the 40-45 degrees frosting over cake.
  • Freeze and let defrost slightly before serving.
  • Cut into bite-sized pieces with a thin knife.
  • Garnish with raspberry and leftover chocolate frosting that have been frozen and crushed.
