Hainanese Pork Chops

Hainanese Pork Chop - 海南炸猪排

Almost every culture in the world has a version of a breaded pork, chicken or beef. In South America you have the Milanesa. In the southern states in the USA you have the chicken fried steak. This is the Chinese version of a breaded fried cutlet that is popular on the island of Hainan.

Ingredients

  • 18 soda cream crackers
  • 2 eggs
  • 50 g frozen mixed veg corn, peas and carrot
  • 1 red onion sliced
  • 1 tbsp garlic minced
  • 2 tbsp olive oil
  • canola oil for deep-frying
  • 600 g pork loin

Marinade

  • 1/2 tsp baking soda optional if marinating overnight
  • 1 tsp Chinese Spice Blend (5 spice)
  • 1 tbsp white granulated sugar
  • 1 tbsp garlic minced
  • 2 tbsp tau cheo fermented soya beans
  • 1 tsp sesame oil
  • 1 tbsp light soy sauce
  • 1 tbsp cornstarch mix with 2 tbsp water

Sauce

  • 1 tbsp light soy sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp steak sauce A1
  • 3 tbsp ketchup
  • 1/4 tsp white pepper powder
  • 1 tbsp white granulated sugar
  • 1 tbsp hua tiao optional
  • 1 cup water
  • 1 tbsp cornstarch mix with 2 tbsp water

Instructions

  • Cut 600g of pork loin into 100g slices
  • Butterfly the pork loin slices
  • Flatten pork loin slices with meat tenderizer
  • Marinate flattened pork loin slices with ½ tsp baking soda
  • 1 tsp five spice powder
  • 1 tbsp sugar,
  • 1 tbsp minced garlic,
  • 2 tbsp tau cheo,
  • 1 tsp sesame oil,
  • 1 tbsp light soy sauce
  • Mix 1 tbsp cornstarch with 2 tbsp water
  • Add mixture to pork loin
  • Mix well and set aside to marinate for 1 hr
  • Add 18 soda cream crackers to food processor
  • Blend until fine
  • Transfer to a flat tray and spread them out
  • For sauce mixture, mix 1 tbsp light soy sauce,
  • 1 tbsp worcestershire sauce,
  • 1 tbsp A1 steak sauce,
  • 3 tbsp tomato ketchup,
  • ¼ tsp white pepper,
  • 1 tbsp sugar,
  • 1 tbsp hua tiao (optional),
  • 1 cup water
  • Mix well and set aside
  • Mix 1 tbsp cornstarch with 2 tbsp water
  • Add 2 beaten eggs to pork loin slices and mix well
  • Coat pork loin slices with cracker crumbs
  • Heat sufficient oil in a wok, deep-fry pork loin slices till golden brown
  • Drain and set aside
  • Heat 2 tbsp oil in pan
  • Add 1 tbsp minced garlic,
  • 1 red onion (sliced),
  • 50g of frozen mixed veg
  • Stir fry until onions turn translucent
  • Add sauce mixture and bring to boil
  • Thicken sauce with cornstarch solution
  • Add sauce to fried pork chop
