Salted Egg Yolk Prawns


Here’s the part 2 of the salted egg yolk dishes, the other half of the sauce from the last salted egg yolk chicken video is for.

Ingredients

Marinade

  • 1/2 tsp white granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Salted egg yolk sauce

  • 8 salted egg yolks
  • 4 tbsp olive oil
  • 1 tsp garlic minced
  • 1 tsp ginger minced

Instructions

  • Deshell and devein 20 large prawns. Add 1 teaspoon of sugar, ½ a teaspoon of salt, ¼ teaspoon of pepper to the prawns. Let them marinate for about 15 minutes while you are preparing the other ingredients.
  • Steam 8 salted egg yolks for 10 minutes in a steamer or double boiler.
  • Mash salted egg yolks as fine as possible into a paste. Add 4 tablespoons of oil to a skillet or sauce pan. Fry the salted egg yolks until foamy. Add 1 teaspoon of minced garlic and 1 teaspoon of minced ginger. Fry until fragrant and set aside.
  • In a small bowl, beat an egg and set the bowl aside. Pour 1 cup of rice flour on a plate or shallow baking dish.
  • Dip prawns in the egg wash, then dredge them in the rice flour
  • In a wok or deep skillet, heat oil to 320 degrees F (160 C) and deep-fry prawns until golden brown. Drain and set aside.
  • Thinly slice 2 to 3 chili peppers. In the same skillet, melt 1 ½ tablespoons of butter, add the chili pepper slices, the 20 curry leaves and 4 tablespoons of the egg yolk mixture and sauté until fragrant (about 1 minute). Add prawns and toss until evenly coated with sauce.
  • Remove and serve.

Another tasty and finger licking zi char goodie, we recommend using large prawns, so that you have a juicier and plumper result. You can cook it with or without the shell, it’s a matter of preference. For this recipe we used rice flour so that we get a better crunch when the prawns are deep-fried.
Best served for a big group of friends or family, cook enough for all to share and you’ll have yourself a fabulous meal.
