Shaved Cauliflower and Radicchio Salad
We’re always looking for ways to use cauliflower. Here’s a great recipe that combines shaved florets of cauliflower with spicy Aleppo pepper flakes. The recipe calls for crisp, raw slices of cauliflower but I prefer to lightly blanch the florets and chill them before mixing the ingredients.
Ingredients
- 1⁄4 cup lemon juice fresh
- 1⁄4 cup honey
- 2 tbsp ancho chili powder
- 2 tbsp orange juice fresh
- 2 tbsp olive oil
- 1 1⁄2 cups baby arugula
- 3⁄4 cup raisins golden
- 1⁄2 cup pistachios toasted
- 1⁄4 cup parsley packed leaves
- 3 stalks celery thinly sliced
- 1 head radicchio (achicoria) thinly sliced
- 1⁄2 head cauliflower (about 1 lb.), trimmed and thinly shaved using a mandoline
- Kosher salt to taste
Instructions
- Whisk lemon juice, honey, Aleppo, orange juice, oil, and salt in a large bowl.
- Add remaining ingredients and toss to combine.
- Transfer salad to a serving platter; garnish with more Aleppo pepper.
