Tagliatelle al Limone

Buy a fresh, homemade pasta, or prepare your own tagliatelle. The thick bands of pasta are the star in this dish and a dry pasta simply won't achieve the same result. The fresh pasta and this luxurious sauce will be a certain winner with your family or dinner guests.

Ingredients

  • 500 g tagliatelle
  • 2 lemon (about 2 tbsp of zest)
  • 150 g crème fraiche
  • 1 glass sparkling wine
  • 100 g Parmesan cheese
  • 50 g salted butter
  • Parmesan cheese
  • salt
  • parsley a few sprigs

Instructions

  • In a large pot of salted water, cook the pasta (about 5 minutes) until al dente
  • Juiice the two lemons and zest one lemon
  • In a pan melt the butter and lightly sauté the lemon juice and the lemon zest from one of the lemons
  • Add the wine (taking a swig from the bottle is optional but recommended)
  • Add the crème fraiche and stir until fully incorporated
  • Remove the pasta and drain
  • Add the drained pasta to the pan and stir to coat the paste
  • Roughly chop the parsley
  • Plate the pasta and sprinkle on some parsley and grated parmesan
  • Enjoy
