Chicken Souvlaki with Oranges and Lemons

Souvlaki is the shish-kebab of Greece. This recipe utilizes chicken but the skewers are often made with lamb and seafood as well. The citrus and the fresh oregano give these kebabs their definitive Greek flavor. Serve the kebabs and citrus with a side of tzatziki.

Ingredients

  • 2 pounds boneless chicken breast cut about 24 into 1 1/2-to 2-inch pieces
  • Kosher salt
  • 1/2 cup olive oil extra-virgin
  • 2 tablespoons oregano plus some for basting
  • 2 cloves garlic sliced
  • 2 shallot sliced
  • 4 green onion (scallion)
  • 1 jalapeño chili pepper sliced
  • 3 lemon
  • 2 orange

Instructions

  • Sprinkle the chicken pieces with salt and transfer to a bowl. Zest and juice one of the lemons. In another bowl, combine the chopped olive oil, oregano, garlic, shallots, jalapeno, lemon zest and juice. Stir to combine, and then pour half of the marinade over the pork. Massage to coat, cover with plastic wrap and refrigerate at least 3 hours or overnight.
  • Cut four very thin slices from the center of each of the remaining lemons and the oranges.
  • Remove the chicken from the refrigerator to take the chill off. Soak the wooden skewers in salted water at least 20 minutes. Tie the remaining oregano into a bundle to make a basting brush, and dip in the reserved marinade.
  • Preheat a grill or grill pan to medium.
  • Remove the chicken from the marinade and thread 3 pieces of chicken onto each skewer placing one folded slice of lemon and orange and a slice of the shallot between each piece of meat.
  • Grill until lightly charred, about 1 minute, and then brush with the marinade and flip. Baste again, and grill for 1 minute on the second side.
  • Transfer the skewers to a sheet of foil. Pour the remaining marinade over the meat, add the oregano bundle and crimp the edges of the foil together to make a sealed package.
  • Place the foil package on the grill until the meat is cooked through, 5 to 7 minutes longer. Grill the fruit cut-side down until lightly charred, about 1 minute.
  • Serve the souvlaki with the grilled citrus squeezed over or on the side.
