Ensalada de Buena Noche
The meal on Christmas Eve in Mexico will often include a salad that contains lettuce, beets, red onions, and a variety of fruit. This version contains slices of blood oranges. The salad is a favorite at Christmas because of the vivid green and red colors of the salad.
Ingredients
- 1 head romaine lettuce
- 1/2 red onion fine slices
- 2 blood oranges sliced crossways, subs small Valencia oranges
- 2 beet small
- 2 tbsp pomegranate seeds
- 1 tbsp olive oil
- 1 tbsp cilantro (leaves)
Instructions
- Wrap the cleaned beets in plastic wrap and place is microwave safe dish and microwave on high heat for about 3 minutes just until the beets can easily be penetrated with a fork but not fully cooked. Remove from the microwave oven and allow to cool. Then peel the beets and slice in small wedges lengthwise.
- Place the beet wedges in a bow. Mix 1 tbsp of olive oil with the cumin and pour into the bowl with the beets. Toss until the beets are lightly covered in the mixture. Place the beets in baking dish and roast for 15 minutes in a pre-heated oven at 375 degrees F. Remove and refrigerate the roasted beets.
- Slice or tear the lettuce into pieces. In a large bowl combine the sliced lettuce, sliced onions, and beets. Add about tablespoons of Orange Ale Dressing and toss.
- Serve topped with a couple of slices of the blood oranges and a few of the pomegranate seeds.
Notes
For a non-vegan option you can add some crumbled queso fresco
