Raspberry pancakes
If you skim down the recipe and see the words: berries, chocolate, almonds and maple syrup – you know you’re onto a good thing. If you then glance back up and see that the title is pancakes – you know you’re onto an even better thing. Need we say more? Recipe created by Dorian Nieto from http://doriannn.blogspot.fr/
Ingredients
Pancakes:
- 3 egg
- 1 cup all-purpose flour
- 1/4 cup whole milk
- 1/4 cup salted butter Melted
- 2 1/2 tsp baking powder
- 3 tbsp powdered sugar
- 1/2 cup raspberries
- 3 tbsp almonds Flaked
Tapenade
- 100 g dark chocolate (bittersweet) 70% (ice cold)
- 50 ml quinoa puffs
- 1 tbsp coconut oil
- basil Shredded
Raw Raspberry Jam:
- 100 ml raspberries
- 1 tbsp muscovado sugar subs dark brown sugar
- orange zest from 1 Orange
Instructions
- Blend chocolate briefly.
- Add almonds and repeat.
- Stir together and put aside.
- Add eggs, milk, butter and flour to blender and mix to a creamy dough.
- Add baking powder and sugar. Blend smooth.
- Pour batter into bowl, add raspberries and almonds and toss. Mash raspberries gently.
- Fry in hot pan with a knob of butter.
- Serve piping hot with raspberry jam, maple syrup and chocolate tapenade.
