Roasted Eggplant
OK. We admit it. We included this recipe because we loved the cool video that accompanies it. But nevertheless, this is a simple and fabulous side dish when fresh ingredients are utilized.
Ingredients
- 1 lb eggplant
- 1/4 cups Parmesan cheese
- 1 tbsp olive oil extra virgen
- salt
Instructions
- Cut the tops off each eggplant and slice in half, lengthwise.
- Set each piece in a broiling pan or casserole, cut side up, largest pieces to the outside of the pan.
- Drizzle with extra virgin olive oil.
- Mince the garlic and sprinkle over the top of each piece of eggplant.
- Spinkle on the parmesan cheese.
- Season with salt and peper.
- Put the pan in an oven pre-heated to 450 F (232 C). Remove the pan after 20 minutes.
- Transfer to a serving dish. Enjoy.
