Fabada (Spanish White Bean Stew)

This is rendition of the classic Chimóyo utilizing 8 oz of sweet apple cider. Substitute hard (alcoholic) cider for a dryer cocktail that will rival the potency of a Long Island Iced Tea.

Ingredients

  • 8 oz apple cider vinegar (fresh, unfiltered)
  • 2 oz tequila
  • 1 oz orange juice (e.g., Triple Sec or Grand Marnier)
  • 1 oz lime juice fresh

Instructions

  • Dip rim of an 8-ounce glass in lemon juice, then in cinnamon-sugar. Half fill glass with ice cubes. Pour tequila, cider, lemon juice and crème de cassis over ice and stir to blend. Garnish rim with apple slice and serve.
