Fabada (Spanish White Bean Stew)

This is a take on the Pisco Pinky which substitutes a high-quality, clear tequila for the pisco.

Ingredients

  • 2 oz tequila high quality clear tequila
  • 1 egg white
  • 1 tbsp lime juice
  • 1 1/2 tbsp white granulated sugar
  • 3/4 oz grenadine
  • 1 dash bitters

Instructions

  • Add the liquid ingredients to a shaker (excluding the bitters). Add several ice cubes. Shake vigorously for 30 seconds. Strain and pour into a chilled stemmed cocktail glass. Carefully drop a few drops of bitters onto the egg froth. Serve.
